    Our Story

    It all began in 2011 while on a business trip to Dallas, Texas, when our pitmaster, Steve, tried Texas style BBQ for the first time - and was immediately hooked.  He actually several pounds of meat home in a cooler, so his wife could try some, as she didn't believe it was as good as Steve said it was.  It ended up being love at first bite for her too!  Steve then bought a cheap bullet smoker from a local chain hardware store, and taught himself to smoke brisket, ribs, pork, sausage and pretty much anything that caught his fancy.  Steve had opportunities to smoke on various pits, including the bullet smoker, offset stick burners, and a large rotisserie smoker.


    In 2013, while trying to raise money to help with adoption expenses, Steve had an idea of doing a fundraiser selling smoked meat, and after a wildly successful event (selling over 300 pounds of meat in about an hour), many people asked where our restaurant was.  This got our mental wheels spinning, and in 2014, we started Hill City Smokehouse, with a focus on vending at various events and festivals, as well as catering private functions.

    Events

     Are you hosting or promoting an event or festival, and looking for food vendors?  We've done many events over the years, and always draw a crowd...many of our customers come to events just to get our food.  Whether it's a food festival, a vintage market, concerts, or even bbq competitions, we can meet most needs. 

    Catering

    Planning a wedding, graduation or birthday party, company picnic, or just want to impress your friends and family?  We have many options available from drop off service, to full buffet service.  We can also set-up a carving station and cut your guests' meat to order, just like the meat markets of Central Texas!  Check out our menu page for a list of our meats and sides we can provide.    We use only the highest quality meats, and make everything from scratch...including our award winning bbq sauce!  We also only smoke our meats with wood...no gas assisted smokers here!  Due to the length of time to smoke some of our meat (up to 18 hours), minimum party sizes apply to all catering.  Contact us for more details, and to see if our dates are free for your event.
