A bun piled high with smoked Texas style beef brisket.
Succulent pork smoked for hours, then piled on a bun. We don't sauce our pork, so you can add the sauce you prefer... either our vinegar sauce or our BBQ sauce.
Torilla Chips smothered in nacho cheese sauce, topped with your choice of brisket or pork, then drizzled in sour cream and our signature bbq sauce. Jalapeno slices available.
Ribs dusted in our house rub, and lightly brushed in our sauce just prior to serving...get 'em by the bone, the 1/4 rack, 1/2 rack or whole rack.
We usually smoke some sausage, and make it available to add to any sandwich for a small charge. Sometimes we serve it on a hoagie roll, covered in nacho cheese, topped with cole slaw and our signature BBQ sauce.

Texas style brisket, slow smoked for almost 18 hours, with a blend of hickory and oak wood. Sliced or chopped.
Coated with our signature rub, and slow smoked for 10+ hours.
Choose from full Spare ribs, St. Louis cut spare ribs, or baby back ribs. Dusted in our signature rub, then lightly glazed with our award winning BBQ sauce for a little shine, and some sweetness for your tastebuds!
These are the ribs Fred Flintstone would eat...each bone is almost the size of a forearm, and average a pound each! We use the same rub as our Texas Style Brisket.
Pork loin slathered in our ancho chile rub, or choose "Celebrity Roast" rub from Stonespice Company. Smoked to medium rare,this is some of the most moist and flavorful pork loin out there. For a twist, you can also choose a bone in loin, for thick cut smoked pork chops.
Bacon in its natural, uncured state...smoked as a slab, and sliced and served hot, or done as "Burnt Ends"...little pieces of meat candy you won't want to stop eating.
Unlike a lot of places, ours is not "prime" in name only...we use USDA Prime rib roasts for our smoked Prime Rib. Smoked to rare/medium rare.
Lightly smoked salmon or trout fillets as entrees, or try the mahi-mahi for fish tacos.
Half chickens, whole turkeys, boneless turkey breast, turkey legs, cornish hens, and whole ducks are available.
Want to really impress your guests? Have a Pig Pick'n, with a whole pig smoked and served on a giant platter. Let your guests pick the pig, or we can debone and chop it for you.
Yep, alligator! Flown in direct from Louisana, smoked alligator is sure to impress. Smoked and pre-pulled for tacos, or do a whole one for a 'gator pick'n.
Add some side fixin's to go with your smoked meat
Choose from two types of slaw...our regular creamy style slaw, or our chipotle radish slaw. Put on your sandwich, or as a standalone side.
A recipe that has been in my wife's family for as long as we can remember...even our picky kids eat it up.
This is some seriously good mac and cheese...actually, with the amount of cheese in it, it should be called cheese and mac - no "cheese" from a can here! Another family recipe passed down to us. Choose regular, or add jalapenos for a little kick.
Baked beans, seasoned with our special rub and BBQ Sauce, with onions and jalapenos (not spicy though), and chunks of smoked meat. This stuff will stick to your ribs!
Our take on Mexican Street Corn. Grilled corn kernels (no cob), seasoned with ancho chile, mixed with Cotija cheese, and topped with crema and cilantro.
Finish off your meal with a selection of desserts
Creamy vanilla pudding, layered with vanilla wafers and sliced banana, and topped with real, scratch made whipped cream.
Peach or Cherry Cobbler, served warm. Ice Cream available as well.
Choose from a variety including pecan, chocolate chess, sweet potato, peanut butter, apple and cherry. Whole pies only.
